Ingredients

  • 8 ounces pasta penne or rigatoni
  • 2 cups cherry tomatoes halved
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 2 cloves garlic minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup shredded mozzarella cheese
  • 8 ounces burrata cheese torn into pieces
  • fresh basil leaves for garnish

Instructions

Step 1: Preheat and Prepare Tomatoes

  • Preheat your oven to 400°F (200°C). Toss the halved cherry tomatoes with olive oil, minced garlic, dried basil, dried oregano, salt, and pepper on a baking sheet. Spread them out evenly and roast for 20-25 minutes until they are soft, slightly caramelized, and bursting with flavor.

Step 2: Cook the Pasta

  • While the tomatoes roast, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta and return it to the pot.

Step 3: Combine Pasta & Roasted Tomatoes

  • Add the roasted tomatoes along with their juices to the cooked pasta. Toss gently to combine, allowing the flavors to meld together. Adjust seasoning with additional salt and pepper if needed.

Step 4: Assemble the Pasta Bake

  • Transfer half of the pasta mixture into your baking dish. Sprinkle half of the shredded mozzarella over the pasta. Layer the remaining pasta on top, then scatter torn pieces of burrata evenly across the surface. Finish with the remaining mozzarella cheese.

Step 5: Bake to Perfection

  • Place the baking dish in the oven and bake for 15-20 minutes until the cheese on top is melted, bubbly, and golden brown.

Step 6: Garnish and Serve

  • Remove the pasta bake from the oven and let it cool slightly. Garnish with fresh basil leaves before serving for a bright, fresh finish.
