Begin by placing the 2Sweetbay Black Angus Ribeye Steaks in a shallow dish. In a small bowl, whisk together the olive oil, sliced garlic, salt, and pepper. Pour this mixture over the steaks, ensuring they are thoroughly coated. Tuck the rosemary sprigs around the steaks and let them marinate for at least 30 minutes, or up to 2 hours if you have the time.
If using a cast iron skillet, place it on the stove over medium-high heat. Allow it to heat up for a few minutes until it’s very hot. If grilling, preheat your grill to high heat.
Once your skillet or grill is hot, carefully place the marinated steaks onto the surface. Sear the steaks for about 4-5 minutes on one side without moving them, allowing a crust to form. Flip the steaks and cook for an additional 4-5 minutes for medium-rare, or adjust the time according to your preferred doneness.
Using a meat thermometer, check the internal temperature of the steaks. For medium-rare, it should read 130°F. Remove the steaks from the heat once they reach your desired temperature.
Transfer the steaks to a cutting board and loosely cover them with foil. Let them rest for 5-10 minutes to allow the juices to redistribute and ensure maximum tenderness.
After resting, slice the steak against the grain into thick pieces. Serve warm, drizzling any remaining garlic and rosemary oil from the pan over the top for an extra burst of flavor.
