  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder

  • Step 1: Preheat your oven to 400°F (200°C).
  • Step 2: In a mixing bowl, combine the diced sweet potatoes with 1 tablespoon of olive oil, salt, black pepper, dried rosemary, onion powder, and garlic powder. Toss until evenly coated.
  • Step 3: Spread the sweet potatoes out on a baking dish and roast for 20-25 minutes until tender and caramelized, stirring halfway through.
  • Step 4: Drizzle the remaining olive oil over the salmon fillets and season with salt and black pepper. Optionally, sprinkle with rosemary.
  • Step 5: When the sweet potatoes have about 10 minutes left, add the salmon to the baking dish and bake for 10-12 minutes until cooked through.
  • Step 6: Serve the salmon alongside the roasted sweet potatoes and enjoy!
