Ingredients

For the Fajitas:

  • 3 tablespoons cooking oil (divided)
  • 2 cloves garlic (finely minced)
  • 2 teaspoons ground cilantro
  • 2 teaspoons ground cumin
  • 1-2 teaspoons ground cayenne pepper (to taste)
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 4 boneless, skinless chicken breasts
  • 2 red onions (sliced into strips)
  • 2 bell peppers (any color) (sliced into strips)
  • Fresh lime juice (optional)
  • 8 (6-inch) flour tortillas

Instructions

Build Skillet Chicken Fajitas Step by Step

  • Step 1: Prepare the Chicken - Start by seasoning the chicken breasts. In a small bowl, mix together the minced garlic, ground cilantro, ground cumin, cayenne pepper, dried oregano, and kosher salt. Rub this mixture all over the chicken breasts, ensuring they are well coated.
  • Step 2: Heat the Skillet - In a large skillet, heat 1 tablespoon of cooking oil over medium-high heat. Once hot, add the seasoned chicken breasts. Sear for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice golden-brown color. Use a meat thermometer to check for an internal temperature of 165°F. Remove the chicken from the skillet and let it rest.
  • Step 3: Cook the Vegetables - In the same skillet, add the remaining 2 tablespoons of cooking oil. Toss in the sliced red onions and bell peppers. Sauté for about 5-6 minutes, or until they are tender but still crisp. The high heat will help caramelize the veggies for extra flavor.
  • Step 4: Slice the Chicken - While the vegetables are cooking, slice the rested chicken into thin strips. This will help it mix seamlessly with the veggies and make for easy filling in the tortillas.
  • Step 5: Combine and Serve - Return the sliced chicken to the skillet with the vegetables. Toss everything together for a couple of minutes to heat through. If desired, squeeze some fresh lime juice over the mixture for an added zing.
  • Step 6: Warm the Tortillas - In a separate dry skillet, warm the flour tortillas for about 30 seconds on each side. This will make them pliable and enhance their flavor.
  • Step 7: Assemble Your Fajitas - Serve the chicken and vegetable mixture on the warm tortillas. Top with your favorite toppings like sour cream, guacamole, or salsa, and enjoy your delicious skillet chicken fajitas!
