Skinny Black Bean Flautas

Ingredients

For the Filling:

  • 30 ounces black beans canned, drained
  • 1 cup reduced-fat shredded cheddar cheese
  • 4 ounces canned diced green chiles
  • 2 teaspoons Skinny Ms. taco seasoning
  • 10 8-inch whole wheat flour tortillas

  • Preheat your oven to 400°F (200°C) for crispy flautas.
  • In a large mixing bowl, combine the drained black beans, reduced-fat cheddar cheese, diced green chiles, and Skinny Ms. taco seasoning. Mash the black beans slightly and mix until well combined.
  • Take one tortilla and spoon about 2-3 tablespoons of the filling onto one edge. Roll it tightly to create a flauta shape, then place seam-side down on a baking sheet. Repeat with remaining tortillas and filling.
  • Lightly spray the tops of the flautas with cooking spray and bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  • Remove from the oven and let cool for a few minutes. Serve with your favorite toppings such as salsa, avocado, or Greek yogurt.

Notes

  • Leftover flautas can be stored in an airtight container in the refrigerator for up to three days.
