Skinny Chicken Parmesan

This Skinny Chicken Parmesan is a light twist on a classic favorite! Juicy chicken with homemade marinara and gooey cheese, all guilt-free!

Ingredients

For the Marinade:

  • 3 tablespoons Olive Oil
  • 2 tablespoons Cider Vinegar
  • 1 teaspoon Dried Basil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper

For the Marinara Sauce:

  • 28 oz Crushed Tomatoes canned
  • 1 tablespoon Olive Oil
  • 1 unit Yellow Onion chopped
  • 2 cloves Garlic peeled
  • 1 teaspoon Chicken Bouillon
  • 1 teaspoon Dried Basil
  • ½ teaspoon Dried Parsley
  • ¼ teaspoon Dried Oregano
  • ¼ teaspoon Sugar
  • ¼ teaspoon Salt
  • ¼ teaspoon Red Pepper Flakes
  • ¼ cup Water

For the Chicken:

  • 4 unit Chicken Breasts thinly pounded

For Topping:

  • 1 cup Shredded Mozzarella Cheese
  • ½ cup Panko Bread Crumbs
  • ¼ cup Freshly Grated Parmesan Cheese
  • 1 tablespoon Butter melted

Instructions

Directions:

  • In a bowl, whisk together the olive oil, cider vinegar, dried basil, garlic powder, onion powder, salt, and pepper to prepare the marinade.
  • Place the chicken breasts in a shallow dish and pour the marinade over them. Let it marinate for at least 30 minutes.
  • In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until softened, then add garlic and cook until fragrant.
  • Stir in the crushed tomatoes, chicken bouillon, dried basil, dried parsley, dried oregano, sugar, salt, red pepper flakes, and water. Simmer for about 10 minutes.
  • Preheat your oven to 375°F (190°C).
  • In the same skillet, heat more olive oil over medium-high heat. Cook the marinated chicken for about 4-5 minutes per side until golden brown.
  • In a greased baking dish, spread a layer of marinara sauce. Place the browned chicken on top and spoon more sauce over each piece. Sprinkle with mozzarella cheese.
  • In a small bowl, mix panko bread crumbs, grated Parmesan cheese, and melted butter. Sprinkle this mixture over the cheese.
  • Bake in the oven for 25-30 minutes until the cheese is bubbly and golden, and the chicken is cooked through.
  • Allow to cool slightly before serving. Enjoy your Skinny Chicken Parmesan with pasta, salad, or on its own!
