Ingredients

For the Stew:

  • 1 cup white whole wheat flour adds nutty flavor
  • 1/2 teaspoon black pepper
  • Kosher or sea salt to taste
  • 1 teaspoon dried sage provides herbal note
  • 1/4 cup oil (canola or unrefined coconut oil)
  • 2 1/2 pounds skinless, bone-in chicken the star of the dish
  • 3 carrots sliced
  • 1 potato cubed
  • 2 celery stalks sliced
  • 1 yellow onion thinly sliced into rings
  • 2 garlic cloves minced
  • 2 cups low sodium fat-free chicken broth the base of your stew
  • 1 cup frozen peas added at the end

Instructions

Directions:

  • Step 1: Prepare the Ingredients. Start by slicing your carrots, celery, and onion. Cube the potato and mince the garlic. Make sure your chicken is ready to go.
  • Step 2: Sauté the Vegetables. In a medium skillet, heat the oil over medium heat. Add the sliced onions and cook until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.
  • Step 3: Combine Ingredients in the Slow Cooker. Add the sautéed onions and garlic, followed by the sliced carrots, cubed potato, and sliced celery. Nestle the chicken on top.
  • Step 4: Add the Seasonings. Sprinkle flour, black pepper, sage, and salt over the chicken and vegetables. Pour in the chicken broth.
  • Step 5: Cook. Cover the slow cooker and set it to low for 6-8 hours or high for 4 hours.
  • Step 6: Add the Peas. In the last 30 minutes of cooking, add the frozen peas.
  • Step 7: Serve. Once done, shred the chicken or serve whole. Enjoy your hearty stew!
