Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes chopped
  • 1 cup fresh spinach chopped
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup fresh basil chopped

Instructions

Step 1: Prepare the Chicken

  • Season the chicken breasts generously with salt, pepper, garlic powder, and dried Italian herbs. Heat the olive oil in a large skillet over medium-high heat. Once hot, sear the chicken for 2-3 minutes on each side until golden-brown.

Step 2: Layer Ingredients in the Slow Cooker

  • Place the seared chicken breasts at the bottom of the slow cooker. Pour chicken broth and heavy cream over the chicken. Add chopped sun-dried tomatoes and sprinkle grated Parmesan cheese evenly on top.

Step 3: Cook on Low

  • Cover and cook on low for 4-5 hours until the chicken is tender and infused with Tuscan flavors.

Step 4: Add Fresh Greens and Herbs

  • About 15 minutes before serving, stir in chopped fresh spinach and basil. Let the residual heat wilt the spinach without overcooking.
