Preheat your oven to 350°F (175°C).
Place the frozen burritos on a baking sheet and heat them in the oven for about 20-25 minutes or until heated through.
In a mixing bowl, combine sour cream, diced green chiles, lime juice, lime zest, cumin, and salt and pepper to taste. Whisk until smooth.
In a small saucepan, heat the frozen corn and butter over medium heat. Add the diced red bell pepper and cook until warmed and tender.
Spread half of the green chili sauce on the bottom of a baking dish. Place the burritos on top and pour the remaining sauce over them. Sprinkle cheese on top.
Cover with aluminum foil and bake for 15 minutes. Remove foil and bake for an additional 10 minutes, until cheese is bubbly and golden.
Let cool for a few minutes, top with chopped cilantro, and serve with the corn and pepper mixture on the side.
