Ingredients

Dry Ingredients for Dough

  • 2 1/2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Ground cinnamon

Wet Ingredients for Dough

  • 1 cup Unsalted butter softened
  • 1 cup Granulated sugar
  • 1 Large egg
  • 1 teaspoon Vanilla extract

Cinnamon Sugar Filling

  • 1/2 cup Brown sugar
  • 1 tablespoon Ground cinnamon

For Rolling Coating

  • 1/4 cup Granulated sugar for rolling

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Make the Dough

  • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon.
  • In a large bowl, use an electric mixer to cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  • Beat in the egg and vanilla extract until fully combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.

Prepare Cinnamon Sugar Filling

  • In a small bowl, stir together the brown sugar and ground cinnamon for the filling.

Assemble Cookies

  • Lightly flour your work surface and roll the dough into a rectangle about 1/4 inch thick.
  • Evenly sprinkle the cinnamon sugar mixture over the dough, pressing lightly to help it adhere.
  • Starting from the long edge, carefully roll the dough into a tight log. Wrap in plastic wrap and chill in the fridge for at least 30 minutes.
  • Once chilled, unwrap the dough and slice into 1/2-inch thick rounds using a sharp knife or pizza cutter.
  • Roll each slice in granulated sugar to coat. Place cookies on the baking sheet spaced about 2 inches apart.
  • Bake for 10-12 minutes or until edges are set but centers remain soft.
  • Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
