Ingredients

  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 4 tablespoons shortening
  • 1 cup warm water
  • 2 quarts oil for frying
  • Honey for drizzling

Instructions

  • In a large mixing bowl, combine the flour, baking powder, and salt. Mix until well combined. Add the shortening and incorporate until it resembles coarse crumbs.
  • Pour in the warm water gradually, mixing until a soft dough forms. Knead gently on a floured surface for about 5 minutes.
  • Cover the dough with a clean towel and let it rest for about 30 minutes.
  • Divide the dough into smaller pieces and roll each out to about 1/8 inch thick. Cut into squares or triangles.
  • Heat the oil over medium-high heat. Test if ready by dropping a small piece of dough; it should sizzle.
  • Carefully place the cut dough into the hot oil, frying until golden brown, about 2-3 minutes per side.
  • Remove from oil with a slotted spoon and place on paper towels to drain. Drizzle with honey and serve immediately.

Equipment

  • Mixing Bowl
  • Rolling Pin
  • Frying pan or deep fryer
  • Slotted spoon
  • Paper Towels

Notes

  • Make sure the oil is hot enough to avoid greasy sopapillas.
  • Don’t overcrowd the frying pan; fry in batches for best results.
  • Let the dough rest for lighter, fluffier pastries.
