Sour Cream Corn Dip

Ingredients

  • 2 cups sharp cheddar cheese shredded
  • 2-3 cups frozen corn defrosted
  • 1 red bell pepper diced
  • 1 can chopped green chilies (about 4 ounces, drained)
  • 1 bunch green onion chopped
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 fresh jalapeno diced (optional)
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper

Instructions

  • In a large mixing bowl, combine the sour cream and mayonnaise. Stir until smooth and creamy.
  • Add the shredded sharp cheddar cheese, defrosted corn, diced red bell pepper, chopped green chilies, and green onions to the mixture. If desired, add the diced jalapeno.
  • Sprinkle in the cumin and cayenne pepper. Stir everything together until well combined. Taste and adjust seasoning if necessary.
  • Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour before serving. Serve with tortilla chips, fresh veggies, or crackers.
