Ingredients
2cupssharp cheddar cheeseshredded
2-3cupsfrozen corndefrosted
1red bell pepperdiced
1canchopped green chilies(about 4 ounces, drained)
1bunchgreen onionchopped
1cupmayonnaise
1cupsour cream
1fresh jalapenodiced (optional)
1teaspooncumin
1/2teaspooncayenne pepper
Instructions
In a large mixing bowl, combine the sour cream and mayonnaise. Stir until smooth and creamy.
Add the shredded sharp cheddar cheese, defrosted corn, diced red bell pepper, chopped green chilies, and green onions to the mixture. If desired, add the diced jalapeno.
Sprinkle in the cumin and cayenne pepper. Stir everything together until well combined. Taste and adjust seasoning if necessary.
Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour before serving. Serve with tortilla chips, fresh veggies, or crackers.
