Southwestern Pizza

This Southwestern Pizza is a flavor-packed twist on classic pizza! Bold spices, fresh toppings, and a unique tortilla crust make it a must-try!

Ingredients

  • 1/2 pound lean ground turkey or lean beef
  • 1/2 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/4 teaspoon salt
  • 3 large tortillas flour or corn
  • 1 medium tomato diced
  • 1 cup romaine lettuce ribbon-sliced
  • 1 cup vegetarian refried beans or canned pinto beans, drained and rinsed, pureed
  • 1 cup reduced-fat shredded cheddar cheese or Monterey Jack cheese

Instructions

  • In a large skillet over medium heat, add the lean ground turkey or beef. Cook until browned, breaking it apart with a spatula. This should take about 5-7 minutes.
  • Once the meat is fully cooked, stir in the chili powder, cumin, and salt. Mix well and let it cook for another 2 minutes, allowing the flavors to meld.
  • Preheat your oven to 400°F (200°C). While the oven is heating, place the tortillas on a baking sheet. You can use three tortillas to create a layered pizza or stack them for a thicker crust.
  • Spread the vegetarian refried beans evenly over the tortillas. If you used pinto beans, ensure they are pureed to a smooth consistency for easy spreading.
  • Spoon the seasoned ground turkey or beef mixture over the beans, spreading it evenly across the tortillas.
  • Sprinkle the diced tomato and shredded cheese on top of the meat layer. Feel free to add more veggies or toppings of your choice to make it your own!
  • Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the tortillas are slightly crisp.
  • Once out of the oven, let the pizza cool slightly. Then, top with ribbon-sliced romaine lettuce for a fresh crunch before slicing.
