Ingredients

  • 6 ounces raw chorizo
  • 8 ounces queso blanco or white American cheese grated
  • 1 small can evaporated milk (5 oz)
  • 1/4 cup whole milk
  • 2 tablespoons diced green chiles
  • 1 tablespoon chopped pickled jalapeños or more to taste
  • Cilantro for topping
  • Tortilla chips for serving

Instructions

  • Begin by heating your skillet over medium heat. Add the raw chorizo and cook it until browned, breaking it apart with your spatula as it cooks. This should take about 5-7 minutes.
  • Once the chorizo is fully cooked, reduce the heat to low. Stir in the grated queso blanco or white American cheese, along with the can of evaporated milk and the whole milk.
  • Add the diced green chiles and chopped pickled jalapeños. Stir the mixture constantly until the cheese has melted completely and the dip is creamy and smooth.
  • Taste your dip and adjust the seasoning if necessary. If you like it spicier, feel free to add more jalapeños or even a pinch of cayenne pepper.
  • Once your dip is ready, transfer it to a serving bowl and garnish with fresh cilantro. Serve immediately with crispy tortilla chips for dipping.
