Step 1: Prepare the Marinade. In a blender or food processor, combine the red chili peppers, garlic, cilantro, lime juice, dried oregano, smoked paprika, olive oil, and salt. Blend until you form a smooth sauce.
Step 2: Marinate the Chicken Wings. In a large bowl, add the chicken wings. Pour about two-thirds of the peri peri sauce over them. Make sure each wing is well coated by tossing them around in the bowl. Cover the bowl with plastic wrap and let the wings marinate in the refrigerator for at least 1 hour, preferably overnight.
Step 3: Preheat Your Oven or Grill. If you’re baking the wings, preheat your oven to 425°F (220°C). If you prefer to grill them, heat your grill to medium-high.
Step 4: Bake or Grill the Wings. Spread the wings out on a baking sheet lined with parchment paper or directly onto the grill. If baking, cook for about 40-45 minutes, turning halfway through until they are crispy and fully cooked. For grilling, cook for about 25-30 minutes, turning frequently until the wings are crisp and cooked through.
Step 5: Serve with Remaining Sauce. Once your wings are perfectly cooked and crispy, take them out of the oven or off the grill. Drizzle the remaining peri peri sauce over the wings for a final flavor boost, and garnish with a bit of extra cilantro for freshness. Serve hot with your favorite sides, and enjoy!
