Ingredients

  • 1 lb. fresh green beans trimmed and cut into halves or thirds
  • 2 T soy sauce (use low-sodium if preferred)
  • 1 T rice vinegar (not seasoned)
  • 2 tsp. sweetener of your choice (such as honey, agave syrup, or coconut sugar)
  • Red pepper flakes (to taste)
  • 1/4 tsp. white pepper (or use black pepper if you don’t have white pepper)
  • 1 T vegetable oil (like canola or avocado oil)
  • 2 T minced garlic
  • 2 T peeled and minced ginger root

Instructions

  • Start by rinsing your fresh green beans under cold water. Trim the ends and cut them into halves or thirds, depending on your preference for bite-sized pieces.
  • In a small bowl, whisk together the soy sauce, rice vinegar, sweetener, red pepper flakes, and white pepper. Adjust the amount of red pepper flakes based on your desired spice level.
  • In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
  • Add the minced garlic and ginger to the hot oil. Sauté for about 30 seconds, or until fragrant, being careful not to burn them.
  • Add the prepared green beans to the skillet. Stir-fry for about 5-7 minutes, until they are bright green and tender-crisp.
  • Pour the sauce over the green beans and stir to coat evenly. Cook for an additional 2-3 minutes, allowing the flavors to meld and the green beans to absorb the sauce.
  • Transfer the Spicy Szechuan Green Beans to a serving dish. Enjoy them immediately as a side dish or over a bed of rice for a delightful main course.
