Ingredients

For the Biscuit Cups:

  • 1 can refrigerated flaky biscuits (8 large biscuits)
  • 2 cups cooked & cubed chicken nuggets (or fingers; warmed in the microwave)
  • 1/4 cup hot sauce
  • 2 tablespoons butter
  • 1/4 cup ranch dressing plus 2 tablespoons
  • 1/2 cup blue cheese (crumbled)
  • 1/2 cup mozzarella cheese (grated)
  • 1/2 cup cheddar cheese (grated)
  • Chopped cilantro (for garnish)

Instructions:

  • Step 1: Preheat your oven to 350°F (175°C). This ensures that your biscuit cups bake evenly and turn golden brown.
  • Step 2: Spray your muffin tin with non-stick cooking spray or use a little butter to grease each cup. This will help the biscuits release easily once they're baked.
  • Step 3: Open the can of refrigerated flaky biscuits and separate them. Flatten each biscuit slightly with your fingers or a rolling pin to create a larger base.
  • Step 4: Place each flattened biscuit into the prepared muffin tin, pressing down firmly to form a cup shape. Make sure to push the dough up the sides of the tin.
  • Step 5: In a mixing bowl, combine the warmed, cubed chicken nuggets, hot sauce, ranch dressing, blue cheese, mozzarella cheese, and cheddar cheese. Stir until everything is well combined.
  • Step 6: Spoon the chicken mixture evenly into each biscuit cup, filling them to the top.
  • Step 7: Place the muffin tin in the preheated oven and bake for about 15-20 minutes, or until the biscuits are golden brown and the cheese is melted and bubbly.
  • Step 8: Once baked, remove the muffin tin from the oven. Allow the cups to cool for a few minutes before carefully removing them. Garnish with chopped cilantro for a fresh touch. Serve warm and enjoy!
