Ingredients

For the Bake:

  • 2 cups diced red potatoes
  • 1 1/4 teaspoons salt divided
  • 8 large eggs
  • 2 teaspoons butter
  • 1/2 cup cottage cheese
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon distilled vinegar
  • 1/4 teaspoon hot sauce
  • 1/4 teaspoon Dijon mustard
  • 2 tablespoons shredded Gruyère cheese
  • 2 tablespoons shredded Monterey Jack cheese
  • 2 tablespoons shredded white cheddar cheese
  • 1/4 cup finely chopped spinach
  • 3/4 cup shredded cheddar cheese
  • 1 tablespoon chopped chives

Instructions

Method:

  • Step 1: Preheat the Oven - Preheat your oven to 375°F (190°C). This step is crucial for ensuring that your bake cooks evenly.
  • Step 2: Prepare the Potatoes - In a medium pot, bring salted water to a boil. Add the diced red potatoes and cook until they are tender, about 10-15 minutes. Drain and set aside.
  • Step 3: Sauté the Spinach - In a skillet, melt the butter over medium heat. Add the chopped spinach and cook until wilted, about 2-3 minutes.
  • Step 4: Whisk Together the Eggs - In a large mixing bowl, crack the eggs and beat them. Add the cottage cheese, remaining salt, onion powder, distilled vinegar, hot sauce, and Dijon mustard. Whisk until smooth.
  • Step 5: Combine the Ingredients - Add the cooked potatoes, sautéed spinach, Gruyère, Monterey Jack, and white cheddar to the egg mixture. Stir gently until well incorporated.
  • Step 6: Transfer to Baking Dish - Pour the mixture into a greased 9x13 inch baking dish. Spread it out evenly.
  • Step 7: Top with Cheddar and Chives - Sprinkle the shredded cheddar and chopped chives over the top.
