Ingredients

For the Chicken Bites:

  • 1 pound chicken breasts boneless and skinless, cut into 1-inch cubes
  • 2 teaspoons salt adjust to taste
  • 1 teaspoon pepper freshly cracked
  • 1 cup Panko breadcrumbs for a crunchy texture

For the Sauce:

  • ½ cup honey adds sweetness and helps create a sticky glaze
  • 2 tablespoons Sriracha sauce provides the spicy kick
  • 3 tablespoons soy sauce low sodium
  • 1 tablespoon dark soy sauce for richer color and flavor
  • 2 tablespoons molasses enhances sweetness
  • 1 teaspoon five-spice powder adds complexity
  • 2 cloves garlic minced
  • 2 tablespoons chives chopped, for garnish
  • 1 tablespoon sesame seeds toasted, for garnish

Instructions

Stepwise Method:

  • Begin by cutting the chicken breasts into 1-inch cubes. Season them generously with salt and pepper, allowing the flavors to infuse into the meat.
  • In a medium bowl, whisk together the eggs. In another bowl, place the Panko breadcrumbs. This will create a simple breading station for your chicken bites.
  • Dip each piece of seasoned chicken into the egg, allowing any excess to drip off, then coat it in the Panko breadcrumbs. Make sure each piece is evenly coated for that perfect crunch.
  • In a separate bowl, combine the honey, Sriracha sauce, soy sauce, dark soy sauce, molasses, five-spice powder, and minced garlic. Whisk until well combined.
  • Preheat your oven to 400°F (200°C). Place the breaded chicken bites on a baking sheet lined with parchment paper or a wire rack. Bake for about 20 minutes, or until golden brown and cooked through.
  • Once the chicken bites are baked, remove them from the oven and immediately toss them in the prepared honey Sriracha sauce, ensuring they are well coated.
  • Transfer the glazed chicken bites to a serving platter. Sprinkle with chopped chives and toasted sesame seeds for added flavor and crunch. Enjoy while warm!
