Ingredients

For the Cauliflower:

  • 1 small head cauliflower chopped (6 1/2 cups florets)

For the Sauce:

  • 1/3 cup low-sodium soy sauce
  • 1/4 cup pure maple syrup or honey, or agave
  • 1/4 cup rice vinegar
  • 1 tbsp minced garlic
  • 1 tsp toasted sesame oil
  • 1 tsp powdered ginger
  • 1 1/2 tbsp cornstarch or arrowroot
  • 1/4 cup water
  • Sesame seeds and scallions for garnish

Instructions

  • Step 1: Preheat your oven to 425°F (220°C) for that perfect crispy texture.
  • Step 2: Wash and chop the cauliflower into bite-sized florets and place in a large mixing bowl.
  • Step 3: In a separate bowl, whisk together the soy sauce, maple syrup, rice vinegar, garlic, sesame oil, and ginger.
  • Step 4: Pour the sauce over the cauliflower and toss until well-coated.
  • Step 5: Spread the cauliflower on a baking sheet lined with parchment paper and bake for 25-30 minutes, flipping halfway.
  • Step 6: In a saucepan, combine cornstarch and water, heat until bubbling and thickened, about 5-7 minutes.
  • Step 7: Once cauliflower is roasted, pour the thickened sauce over and toss gently. Serve hot garnished with sesame seeds and scallions.
