Ingredients

  • 2 cups milk divided (non-fat, reduced fat, or whole)
  • 1.5 cups all-purpose flour
  • 4 medium eggs
  • 0.33 cup avocado oil
  • 1 tablespoon sugar
  • 0.5 teaspoon salt
  • as needed Butter for greasing the pan

Instructions

How to Prepare Sweet Crepes:

  • Step 1: Prepare the Batter - In a large mixing bowl, combine 2 cups of milk, 1 ½ cups of all-purpose flour, 4 medium eggs, ⅓ cup of avocado oil, 1 tablespoon of sugar, and ½ teaspoon of salt. Whisk together until the mixture is smooth and well-combined. Allow the batter to rest for about 30 minutes at room temperature.
  • Step 2: Heat the Pan - Place a non-stick skillet or crepe pan over medium heat. Add a small amount of butter to the pan, allowing it to melt and coat the surface evenly.
  • Step 3: Cook the Crepes - Using a ladle or measuring cup, pour about ¼ cup of the batter into the center of the heated pan. Quickly swirl the pan to spread the batter into a thin, even layer. Cook for about 1-2 minutes, until the edges begin to lift and the bottom is lightly golden.
  • Step 4: Flip the Crepes - Carefully slide a spatula underneath the crepe and flip it over. Cook for an additional 1-2 minutes on the other side. Transfer the crepe to a plate and repeat with the remaining batter, greasing the pan as needed.
  • Step 5: Serve and Enjoy! - Fill your crepes with your favorite sweet fillings or toppings, such as fresh fruit, whipped cream, chocolate spread, or maple syrup. Serve immediately.
