Ingredients

  • 8 oz pasta of your choice (penne, fettuccine, or rigatoni work great)
  • 2 medium sweet potatoes peeled and cubed
  • 2 tablespoons olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried sage
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

Prepare the Pasta

  • Bring a large pot of salted water to a boil. Add your 8 oz of pasta and cook according to the package instructions until al dente. Once cooked, reserve about ½ cup of pasta water, then drain the pasta and set aside.

Roast the Sweet Potatoes

  • While the pasta is cooking, peel and cube 2 medium sweet potatoes. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sweet potatoes and sauté for about 10 minutes, stirring occasionally, until they are tender and lightly browned. Alternatively, you can roast the sweet potatoes in the oven at 400°F (200°C) for 20-25 minutes if you prefer a deeper caramelized flavor.

Sauté Onion and Garlic

  • In the same skillet, add the remaining tablespoon of olive oil. Toss in the diced onion and cook for 3-4 minutes until translucent. Add the minced garlic and cook for another 1-2 minutes, stirring frequently to avoid burning.

Make the Sweet Potato Sauce

  • Transfer the sautéed sweet potatoes, onion, and garlic into a blender or food processor. Pour in 1 cup of vegetable broth and 1 cup of heavy cream. Add 1 teaspoon of dried sage, salt, and pepper to taste. Blend until the mixture is silky smooth. Pour the sauce back into the skillet and warm gently over low heat, stirring occasionally.

Combine Pasta and Sauce

  • Add the drained pasta to the skillet with the sauce. Toss to coat the pasta evenly. If the sauce seems too thick, add a splash of the reserved pasta water to loosen it up until you reach your desired consistency.

Serve and Garnish

  • Serve immediately, topped with freshly grated Parmesan cheese if you like. This adds a lovely salty contrast to the sweet and creamy sauce, but the dish is just as delicious without it.
