Ingredients

For the Stir Fry:

  • 1 dozen medium shrimp cleaned
  • 3 to 4 cups mixed vegetables (broccoli, red pepper, green pepper, carrots, green beans, peapods, sugar snap peas, water chestnuts, mushrooms, baby corn, asparagus, etc.)
  • 1 cup Szechuan sauce adjust according to your heat preference
  • 2 tablespoons olive oil or use sesame, peanut, or canola oil

For the Fried Rice:

  • 1 to 2 cups cooked rice (freshly cooked or leftover)
  • 1 to 2 tablespoons olive oil for frying the rice
  • 1 egg beaten
  • 1 cup diced vegetables (optional: carrots, peas, water chestnuts, mushrooms, peppers, bean sprouts, etc.)

  • Step 1: Prepare the Ingredients - Start by cleaning the shrimp and chopping all your vegetables into bite-sized pieces. If you are using leftover rice, make sure it’s ready to go.
  • Step 2: Heat the Wok - In a large wok or skillet, heat 2 tablespoons of olive oil over medium-high heat. Allow the oil to get hot but not smoking.
  • Step 3: Cook the Shrimp - Add the cleaned shrimp to the hot oil. Sauté for about 2-3 minutes or until they turn pink and opaque. Remove the shrimp from the pan and set them aside.
  • Step 4: Stir-Fry the Vegetables - In the same wok, add more oil if necessary. Toss in the mixed vegetables and stir-fry for about 5-7 minutes until they are tender-crisp.
  • Step 5: Add the Szechuan Sauce - Once the vegetables are cooked, add the Szechuan sauce to the pan and stir well to coat the veggies. Return the shrimp to the pan and mix everything together, allowing it to heat through for another 2 minutes.
  • Step 6: Prepare the Fried Rice - In a separate pan, heat 1-2 tablespoons of oil over medium heat. Add the cooked rice, breaking up any clumps. Push the rice to one side of the pan and pour the beaten egg into the other side. Scramble the egg gently.
  • Step 7: Combine - Once the egg is cooked, mix it into the rice. If you want to add any extra diced vegetables, now is the time. Stir everything together and season with salt and pepper to taste.
  • Step 8: Serve and Enjoy - Place a generous scoop of fried rice on each plate and top it with the Szechuan shrimp stir-fry. Enjoy your vibrant and flavorful meal!
