Ingredients

For the Power Bowl:

  • 1 package Knorr Mexican or Spanish rice
  • 1 cup sour cream
  • ½ cup buttermilk
  • 1 ripe avocado
  • 1 teaspoon chopped garlic
  • 2 teaspoons lime juice
  • 2 teaspoons dry ranch dressing mix
  • 1 pound chicken breast
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons olive oil
  • 2 small or 1 large avocado
  • 1 tablespoon diced red onion
  • 1 teaspoon diced tomato
  • ½ teaspoon salt
  • 1 15-ounce can black beans drained and rinsed
  • 1 tomato chopped use 1 teaspoon of this in the guacamole
  • 1 cup shredded Cheddar cheese
  • ½ cup low-fat sour cream
  • 2 cups shredded lettuce

Instructions

Directions:

  • Start by preparing the Knorr Mexican or Spanish rice according to the package instructions. This will serve as the hearty base of your Power Bowl.
  • While the rice is cooking, season the chicken breast with salt and pepper. Heat the olive oil in a skillet over medium heat, then add the chicken. Cook for about 6-7 minutes on each side or until fully cooked and golden brown. Once done, let it rest for a few minutes before slicing it into bite-sized pieces.
  • In a mixing bowl, mash the ripe avocado. Add the chopped garlic, lime juice, diced tomato, and salt. Mix well to combine. This fresh guacamole is going to add so much flavor to your bowl!
  • In another bowl, combine the sour cream, buttermilk, lime juice, and dry ranch dressing mix. Whisk until smooth. This creamy dressing will elevate your Power Bowl to new heights.
  • Now comes the fun part! In a large bowl, layer the cooked rice, sliced chicken, black beans, shredded lettuce, diced red onion, and chopped tomato. Top it all off with a generous scoop of guacamole and a drizzle of ranch dressing. Finally, sprinkle shredded Cheddar cheese over the top.
