Preheat your oven according to the instructions on your french fry package. Spread the fries evenly on a baking sheet and bake until they are golden and crispy.
In a large skillet, heat the 1 tablespoon canola oil over medium-high heat. Add the 1 lb. ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink.
Once the beef is cooked, add the 2 tablespoons chili powder, 1 tablespoon smoked paprika, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon cumin, 1 teaspoon coriander, and 1/2 teaspoon cayenne pepper. Season with salt and pepper to taste. Stir well to combine, allowing the spices to bloom for about 2-3 minutes.
Once your fries are ready, remove them from the oven and layer them on a serving dish. Top the fries with the seasoned beef mixture, ensuring an even distribution.
Sprinkle 2 cups Mexican Cheese over the beef and fries. Then, add the 1/4 cup cojita for an extra cheesy finish.
Return the assembled Taco Frachos to the oven. Bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Remove the Taco Frachos from the oven and sprinkle with freshly chopped cilantro before serving. Enjoy immediately while they’re hot and cheesy!
