Ingredients

Chicken

  • 3 pieces boneless, skinless chicken breasts, sliced lengthwise into thin cutlets

Seasoning

  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper

Cooking Oil

  • 2 tablespoons olive oil not extra virgin

Herb

  • 2 tablespoons fresh tarragon, chopped or 1 tablespoon dried tarragon

Instructions

  • Step 1: Prepare the Chicken Cutlets. Begin with your chicken breasts, ensuring they are boneless and skinless. Slice each breast lengthwise into thin cutlets to allow for quick, even cooking.
  • Step 2: Season the Chicken. In a mixing bowl, season the chicken cutlets with ½ teaspoon of salt and ¼ teaspoon of ground black pepper. Toss the chicken well to ensure that the seasoning is evenly distributed over all pieces.
  • Step 3: Heat the Olive Oil. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Step 4: Cook the Chicken. Once the oil is hot, carefully place the seasoned chicken cutlets into the skillet. Cook for about 3-4 minutes on one side until they are golden brown and no longer pink in the center. Flip the chicken cutlets and continue cooking for another 3-4 minutes on the other side.
  • Step 5: Add the Tarragon. After the chicken is fully cooked, reduce the heat to low and sprinkle the chopped fresh tarragon over the chicken. Toss the cutlets gently in the pan to coat them with the aromatic herb, allowing the flavors to meld for about 1-2 minutes.
  • Step 6: Serve. Remove the chicken from the heat and transfer it to a serving platter. You can garnish it with additional tarragon if desired.

Equipment

  • Mixing Bowl
  • Skillet

Notes

For maximum flavor, use fresh tarragon. Letting the chicken rest for a few minutes after cooking will help retain its juices.
