Step 1: Preheat your oven to 400°F (200°C).
Step 2: In a mixing bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, and cornstarch until well combined.
Step 3: Pat the chicken drumsticks dry with paper towels. Place the drumsticks in a large bowl and pour half of the teriyaki sauce over them. Toss to coat well.
Step 4: Arrange the drumsticks on a baking sheet lined with parchment paper or a wire rack. Bake for 30 minutes.
Step 5: After 30 minutes, remove the drumsticks and brush them with the remaining teriyaki sauce. Bake for an additional 15-20 minutes until cooked through.
Step 6: Let the drumsticks rest for a few minutes, garnish with sliced scallions, and serve hot.
