Ingredients

For the Chilaquiles:

  • 3 cups green enchilada sauce (or green salsa)
  • 3 cups cooked turkey (or chicken, shredded or cut into small pieces)
  • 5 ounces tortilla chips
  • 1 cup sour cream
  • 10 ounces Monterey Jack cheese (shredded)
  • 1 tomato (chopped, optional)
  • 2 green onions (chopped, optional)
  • 2 tablespoons feta cheese (crumbled, optional)
  • 1 tablespoon fresh cilantro (chopped)
  • ½ teaspoon black pepper (or to taste)

Instructions

Preparation Steps:

  • Step 1: Preheat your oven to 375°F (190°C) if baking for a crispy texture.
  • Step 2: In a large skillet over medium heat, pour in the green enchilada sauce and warm slightly. Add cooked turkey or chicken, stir to combine, and heat through for about 5 minutes.
  • Step 3: Gently fold in the tortilla chips, ensuring they are well coated with the sauce and meat mixture. Add more enchilada sauce if needed.
  • Step 4: Sprinkle the shredded Monterey Jack cheese over the mixture, followed by dollops of sour cream. Mix gently to distribute.
  • Step 5: Optional: Transfer to an oven-safe dish and bake for 10-15 minutes until the cheese is bubbly and golden.
  • Step 6: Garnish with optional toppings such as chopped tomato, green onions, feta cheese, cilantro, and black pepper. Serve immediately.

Equipment

  • Large Skillet
  • Spatula
  • Measuring cups and spoons
  • Oven-safe dish (optional)

Notes

  • Use leftover turkey or chicken to make this dish even quicker!
  • For a vegetarian version, substitute meat with black beans or sautéed bell peppers.
  • Store leftovers in an airtight container in the fridge for up to 2 days, but the chips may lose their crunch.
