Ingredients

  • 2 large chicken breasts
  • 1 teaspoon seasoned salt (such as Lawry's)
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon butter (plus extra if needed)
  • 1 medium onion (cut into 1/4-inch slices)
  • to taste salt
  • 1/2 pound button mushrooms (sliced)
  • 1/4 pound Monterey Jack cheese (shredded)

Instructions

  • Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels and season both sides with seasoned salt and black pepper.
  • In a cast iron skillet or non-stick pan, melt 1 tablespoon of butter over medium-high heat. Add the seasoned chicken breasts and sear for about 5-7 minutes on each side until golden brown. Remove the chicken from the skillet.
  • In the same skillet, add sliced onions and a pinch of salt. Sauté for about 3-4 minutes until they soften. Add sliced mushrooms and cook for another 5 minutes until tender.
  • Return the cooked chicken breasts to the skillet and sprinkle shredded Monterey Jack cheese over the top.
  • Transfer the skillet to the preheated oven and bake for about 10 minutes until the cheese is melted and bubbly.

Notes
