Ingredients

  • 1 large thinly rolled out pizza dough
  • 3 tablespoons peanut butter (smooth or chunky)
  • 2 teaspoons rice vinegar
  • 2 teaspoons low-sodium soy sauce
  • 1 teaspoon olive oil
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons honey
  • 1/2 teaspoon sesame oil
  • 2-3 tablespoons water
  • 1 heaping cup cooked, shredded chicken
  • 1/2 cup chopped red or green onion
  • 3 tablespoons shredded carrot (moisture squeezed out)
  • 1 1/4 cups freshly shredded mozzarella cheese
  • 1/4 cup fresh chopped cilantro

Instructions

  • In a mixing bowl, combine the peanut butter, rice vinegar, low-sodium soy sauce, olive oil, crushed red pepper flakes, grated ginger, honey, sesame oil, and water. Mix until smooth and set aside. This savory sauce will be the star of your pizza!
  • Preheat your oven to 475°F (245°C) to ensure your pizza cooks perfectly and the crust turns golden brown.
  • On a lightly floured surface, roll out the pizza dough to your desired thickness. If you prefer a crispy crust, aim for a thinner dough.
  • Spread the prepared peanut sauce evenly over the rolled-out pizza dough, leaving a small border around the edges for the crust.
  • Evenly distribute the cooked, shredded chicken over the sauce. Next, sprinkle the chopped red or green onions and shredded carrots on top for added crunch and flavor.
  • Generously sprinkle the freshly shredded mozzarella cheese over the chicken and vegetables, ensuring every bite will be cheesy and delicious.
