Ingredients

  • 1 cup unsalted butter softened (1 stick)
  • 1 cup light brown sugar packed
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1.5 cups all-purpose flour
  • 1 cup instant vanilla pudding mix (not cook-and-serve, not sugar-free)
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt or to taste
  • 1 cup M&MS plus more for adding to dough mounds (Dark Chocolate M&MS recommended)
  • 1 cup semi-sweet chocolate chips plus more for adding to dough mounds

Instructions

  • Step 1: Preheat Your Oven
    Start by preheating your oven to 350°F (175°C). This ensures that your cookies bake evenly and come out perfectly.
  • Step 2: Cream the Butter and Sugars
    In a large mixing bowl, beat the softened butter, light brown sugar, and granulated sugar together using an electric mixer until the mixture is light and fluffy.
  • Step 3: Add the Egg and Vanilla
    Add in the large egg and the vanilla extract. Mix until fully incorporated. The mixture should be smooth and creamy.
  • Step 4: Combine Dry Ingredients
    In a separate bowl, whisk together the all-purpose flour, instant vanilla pudding mix, baking soda, and salt. This helps ensure even distribution of the leavening agent and flavors.
  • Step 5: Mix Dry Ingredients with Wet Ingredients
    Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are okay!
  • Step 6: Fold in M&MS and Chocolate Chips
    Gently fold in the M&MS and semi-sweet chocolate chips. Reserve a few for topping the cookie dough mounds later.
  • Step 7: Scoop the Dough
    Using a cookie scooper or a spoon, drop mounds of cookie dough onto a lined baking sheet. Make sure to leave enough space between each mound as they will spread while baking.
  • Step 8: Top with Extra M&MS and Chocolate Chips
    For an extra treat, press a few additional M&MS and chocolate chips into the tops of the dough mounds before baking.
  • Step 9: Bake
    Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will continue to cook as they cool.
  • Step 10: Cool and Enjoy
    Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy the warm, gooey goodness!
