Ingredients

  • 8 oz cheese tortellini fresh or frozen
  • 1 lb steak sirloin or ribeye, trimmed and sliced
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • 1 cup cherry tomatoes halved
  • 1 cup fresh spinach
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

Step 1: Prepare the Steak

  • Pat your steak dry with paper towels to ensure a nice sear. Season both sides generously with salt, pepper, and half of the Italian seasoning.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the steak and cook for about 4-5 minutes per side for medium-rare, or longer depending on your preferred doneness.
  • Remove the steak from the pan and let it rest for 5 minutes before slicing it thinly against the grain.

Step 2: Cook the Tortellini

  • Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, usually 3-5 minutes until they float to the surface and are tender.
  • Drain the tortellini and set aside.

Step 3: Sauté the Vegetables

  • In the same skillet used for the steak, add the remaining 1 tablespoon of olive oil. Reduce heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant but not browned.
  • Add the halved cherry tomatoes and cook for 2-3 minutes until they start to soften and release their juices.
  • Toss in the fresh spinach and stir until just wilted.

Step 4: Combine Everything

  • Add the cooked tortellini back into the skillet with the vegetables. Sprinkle with the remaining Italian seasoning and toss everything together gently to combine and heat through.
  • Taste and adjust seasoning with salt and pepper if needed.

Step 5: Serve

  • Transfer the tortellini and vegetable mixture to plates or a serving bowl. Top with the sliced steak and finish with a generous sprinkle of grated Parmesan cheese.
  • Serve immediately for the best flavor and texture.
