Ingredients

For the Casserole:

  • 16 oz French bread cut into 1-inch cubes
  • 4 eggs
  • 1 cup almond milk or regular milk
  • 1 tsp vanilla extract
  • 1 tbsp granulated sugar
  • 3/4 tsp ground cinnamon

For the Berry Mixture:

  • 5 cups frozen berries a blend of raspberries, blackberries, and blueberries
  • 1/2 cup granulated sugar to sweeten the berry layer
  • 1/2 tsp ground cinnamon to complement the berries
  • 1 tbsp cornstarch to thicken the berry mixture
  • 1 tbsp granulated sugar for the top crust

Instructions

Cooking Instructions:

  • Step 1: Preheat your oven to 350°F (175°C). Cut the French bread into 1-inch cubes and place them in a large mixing bowl.
  • Step 2: In another bowl, whisk together eggs, almond milk, vanilla extract, granulated sugar, and ground cinnamon until well combined.
  • Step 3: Pour the egg mixture over the bread cubes and gently fold until all pieces are coated. Allow to sit for 10-15 minutes to soak.
  • Step 4: In a separate bowl, combine frozen berries, granulated sugar, ground cinnamon, and cornstarch. Toss gently to coat.
  • Step 5: In the baking dish, layer half of the soaked bread mixture, followed by half of the berry mixture. Repeat and sprinkle with granulated sugar.
  • Step 6: Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
  • Step 7: Let cool slightly before serving warm, drizzled with maple syrup or dusted with powdered sugar.
