Ingredients

  • 6-8 handfuls corn tortilla chips
  • 1.5 cups cheddar cheese, shredded
  • 1.5 cups pepper jack cheese, shredded
  • 15 oz chili canned or homemade, warmed or room temp
  • 1/2 cup sliced black olives
  • 1/2 cup sliced, pickled jalapeños
  • 1/2 cup diced tomatoes
  • 3/4 cup sour cream
  • 2 green onions, diced
  • to taste Salsa for serving

Instructions

Preparation Steps:

  • Step 1: Preheat your oven to 350°F (175°C) to ensure the nachos get perfectly melted and crispy.
  • Step 2: Take a large baking sheet and spread the corn tortilla chips in an even layer, avoiding overcrowding.
  • Step 3: Sprinkle the shredded cheddar and pepper jack cheese evenly over the tortilla chips.
  • Step 4: Spoon the warmed chili over the cheese-covered chips to create a flavorful base.
  • Step 5: Scatter the sliced black olives and pickled jalapeños over the chili.
  • Step 6: Place the baking sheet in the oven and bake for about 10-15 minutes, until the cheese is bubbling and the edges of the chips are golden brown.
  • Step 7: Once out of the oven, top the nachos with diced tomatoes, sour cream, and green onions.
