Ultimate Scratch-Made Peanut Butter and Jelly Sandwiches

Ingredients

For the Bread:

  • 1 teaspoon active-dry yeast
  • 1/2 cup lukewarm water
  • 1 tablespoon unsalted butter melted
  • 1/2 cup milk
  • 1 tablespoon granulated sugar
  • 1 1/2 teaspoons salt
  • 2 1/2 to 3 cups all-purpose flour
  • Oil for coating

For the Peanut Butter:

  • 2 cups roasted, unsalted peanuts
  • 1/4 teaspoon fine sea salt

For the Sandwich:

  • 1 jar homemade strawberry jam

Instructions

Prepare the Dough

  • In a small bowl, combine 1 teaspoon of active-dry yeast with 1/2 cup of lukewarm water. Let it sit for about 5 minutes until it becomes foamy.

Mix the Ingredients

  • In a large mixing bowl, combine the activated yeast mixture with 1 tablespoon of melted unsalted butter, 1/2 cup of milk, 1 tablespoon of granulated sugar, and 1 1/2 teaspoons of salt. Stir until well combined.

Add the Flour

  • Gradually add 2 1/2 cups of all-purpose flour to the mixture, stirring until a dough begins to form. If the dough is sticky, continue to add flour until it pulls away from the sides of the bowl.

Knead the Dough

  • Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place until it doubles in size, about 1 hour.

Make the Peanut Butter

  • While the dough is rising, prepare your homemade peanut butter. Place 2 cups of roasted, unsalted peanuts and 1/4 teaspoon of fine sea salt in a food processor. Process until smooth and creamy, about 4-5 minutes.

Shape the Bread

  • After the dough has risen, punch it down to release any air bubbles. Shape it into a loaf or individual sandwich rolls and place on a baking sheet lined with parchment paper.

Second Rise

  • Cover the dough again and let it rise for another 30 minutes until slightly puffy.

Bake the Bread

  • Preheat your oven to 375°F (190°C). Bake the bread for about 25-30 minutes or until golden brown and sounds hollow when tapped on the bottom.

Assemble the Sandwich

  • Spread a generous layer of your homemade peanut butter on one slice of bread and top with a scoop of your homemade strawberry jam. Place another slice of bread on top, cut into triangles, and enjoy!
