Ingredients

For the Fritters:

  • 2 cans chickpeas (15 ounces), divided
  • 2.5 tablespoons olive oil divided
  • 1 cup onion (chopped)
  • 2 tablespoons garlic (minced)
  • 2 cups cauliflower (cut into small pieces)
  • 0.5 teaspoon salt

  • Step 1: Prepare the Ingredients
    Start by draining and rinsing one can of chickpeas. Set aside. In a food processor, combine the cauliflower florets with the remaining chickpeas, onion, and garlic. Pulse until the mixture is finely chopped but not pureed.
  • Step 2: Mix the Batter
    Transfer the chopped mixture into a large mixing bowl. Add salt, black pepper, and 1 tablespoon of olive oil. Stir until well combined. The mixture should hold together easily. If it's too dry, add a splash of water.
  • Step 3: Shape the Fritters
    Using your hands, form the mixture into small patties, about 2-3 inches in diameter. Place them on a plate as you shape them.
  • Step 4: Heat the Skillet
    In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, carefully place the fritters in the skillet, making sure not to overcrowd the pan.
  • Step 5: Fry the Fritters
    Cook the fritters for about 4-5 minutes on each side, or until they are golden brown and crispy. You may need to add more oil in between batches.
  • Step 6: Serve with Hummus
    Once cooked, remove the fritters from the skillet and place them on a paper towel to absorb excess oil. Serve warm, topped with your favorite hummus and garnished with diced green onions.
