2.5tablespoonsolive oildivided
1cuponion(chopped)

Step 1: Prepare the IngredientsStart by draining and rinsing one can of chickpeas. Set aside. In a food processor, combine the cauliflower florets with the remaining chickpeas, onion, and garlic. Pulse until the mixture is finely chopped but not pureed.
Step 2: Mix the BatterTransfer the chopped mixture into a large mixing bowl. Add salt, black pepper, and 1 tablespoon of olive oil. Stir until well combined. The mixture should hold together easily. If it's too dry, add a splash of water.
Step 3: Shape the FrittersUsing your hands, form the mixture into small patties, about 2-3 inches in diameter. Place them on a plate as you shape them.
Step 4: Heat the SkilletIn a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, carefully place the fritters in the skillet, making sure not to overcrowd the pan.
