Ingredients

Dry Ingredients

  • 3 cups oat flour gluten-free if needed
  • 1/4 cup dairy-free vanilla protein powder
  • 1 1/2 teaspoons vegan xanthan gum
  • 4 teaspoons cinnamon
  • 3/4 teaspoon salt
  • 2 1/4 cups mashed ripe banana about 4-5 large bananas
  • 1 cup coconut sugar
  • 1/2 cup unsweetened vanilla almond milk
  • 2 teaspoons vanilla extract
  • 3 tablespoons coconut oil melted (plus extra for greasing)
  • 6 tablespoons water
  • 6 teaspoons baking powder

Instructions

Baking Instructions

  • Step 1: Preheat your oven to 350°F (175°C) to ensure even baking.
  • Step 2: Grease a standard loaf pan with melted coconut oil and set aside.
  • Step 3: In a large mixing bowl, whisk together the dry ingredients until well combined.
  • Step 4: Mash the ripe bananas until smooth, leaving a few small chunks for texture.
  • Step 5: Mix the coconut sugar, almond milk, vanilla extract, melted coconut oil, and water into the mashed bananas.
  • Step 6: Pour the wet ingredients into the dry ingredients and gently fold together with a spatula.
  • Step 7: Transfer the batter to the prepared loaf pan and spread evenly, optionally sprinkling cinnamon on top.
  • Step 8: Bake for about 55-65 minutes, or until a toothpick comes out clean.
  • Step 9: Let the banana bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
