Ingredients

  • 3 cups seedless watermelon cubed and frozen
  • 1 cup fresh strawberries hulled and frozen
  • 1/2 cup freshly squeezed lemon juice
  • 2 tablespoons honey or agave syrup adjust to taste
  • 1/2 cup cold sparkling water or club soda

Instructions

Step 1: Freeze Your Fruit

  • Start by cutting your watermelon into cubes and hulling your strawberries. Place both fruits on a baking sheet lined with parchment paper and freeze for at least 4 hours, preferably overnight. Freezing the fruit beforehand is what gives this mocktail its icy, slushy texture.

Step 2: Blend the Fruits

  • Once frozen, add the watermelon and strawberries to a high-powered blender. Pour in the freshly squeezed lemon juice and honey or agave syrup. Blend on high until smooth and slushy. If the mixture is too thick, add a splash of water to help it blend evenly.

Step 3: Add Sparkling Water

  • Transfer the blended fruit mixture to a large pitcher or directly into serving glasses. Gently stir in the cold sparkling water or club soda to add a bubbly, refreshing finish. Avoid blending the sparkling water to keep the fizz intact.

Step 4: Serve and Garnish

  • Pour the mocktail into glasses filled with ice cubes if desired. Garnish with fresh mint leaves and a slice of lemon for a pop of color and fresh aroma. Serve immediately to enjoy the best texture and freshness.
