Whipped Feta and Red Pepper Dip

Ingredients

  • 6 oz crumbled feta cheese
  • 8 oz cream cheese softened
  • 7.75 oz roasted red peppers (one 12 oz jar with liquid)
  • Salt & pepper to taste

Instructions

  • Gather all your ingredients. This will make the process seamless and enjoyable.
  • In your food processor, add the softened cream cheese. Blend it until it becomes smooth and creamy, about 1 minute.
  • Next, add the crumbled feta cheese to the food processor. Blend until well combined with the cream cheese, scraping down the sides as necessary.
  • Drain the roasted red peppers, reserving a little of the liquid for adjusting the consistency later if needed. Add the roasted red peppers to the mixture and blend until completely smooth and creamy. You can adjust the consistency with the reserved liquid as desired.
  • Taste your dip and season with salt and pepper to your liking. Blend again to incorporate the seasoning.
  • Transfer the dip to your serving bowl. You can drizzle a little olive oil on top and sprinkle some herbs or additional feta for garnish. Serve with pita chips, fresh veggies, or as a spread for sandwiches.
