White Bean Chili with Turkey

This White Bean Chili with Turkey is a hearty, flavorful dish that's perfect for any occasion!

Ingredients

  • 1 tablespoon oil
  • 1 large onion, diced
  • 1 tablespoon chili powder
  • 1 tablespoon garlic, minced
  • 1.5 teaspoons ground cumin
  • 1 teaspoon oregano
  • 3 cans (15.8 ounce) Great Northern beans, rinsed and drained
  • 4 cups broth (chicken or vegetable)
  • 3 cups cooked turkey, chopped
  • 1 Roma tomato, diced and seeded
  • 1/3 cup cilantro
  • to taste Salt and pepper
  • Lime wedge and additional tomatoes and cilantro for garnish (optional)

Instructions

  • In a large pot, heat 1 tablespoon of oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes. Stir in the minced garlic, chili powder, cumin, and oregano, and cook for an additional minute until fragrant.
  • Next, add the rinsed and drained Great Northern beans to the pot. Pour in the broth and stir well to combine all the ingredients. Bring the mixture to a gentle simmer.
  • Once the chili is simmering, add the chopped cooked turkey. Stir everything together, ensuring the turkey is evenly distributed.
  • Add the diced Roma tomato and cilantro to the pot. Season with salt and pepper to taste. Allow the chili to simmer for 15-20 minutes, stirring occasionally.
  • Once your White Bean Chili with Turkey is ready, ladle it into bowls. Garnish with additional chopped tomatoes, cilantro, and a wedge of lime if desired. Enjoy!
