White Bean Hummus (from Julia Child)

This White Bean Hummus is a creamy, nutritious dip that's perfect for any occasion!

Ingredients

For the Hummus:

  • 1 15 oz. can white beans Cannellini or navy beans
  • 20 leaves fresh basil
  • 1 1/2 T fresh lemon juice
  • 1/4 cup Tahini sauce
  • 2 tsp. minced garlic
  • Salt and fresh ground black pepper to taste
  • 2 T olive oil plus more for drizzling

Instructions

Instructions:

  • Open the can of white beans and drain them well. Rinse under cold water to remove excess sodium and set aside.
  • In your food processor, combine the drained white beans, fresh basil leaves, lemon juice, tahini, minced garlic, and a pinch of salt and pepper.
  • Pulse the mixture until it starts to combine, then blend continuously until the hummus is smooth and creamy. If it seems too thick, add a tablespoon of water or more lemon juice to reach your desired consistency.
  • Taste your hummus and adjust the seasonings with more salt, pepper, or lemon juice if needed.
  • With the food processor running, slowly drizzle in the olive oil until fully incorporated.
  • Transfer the hummus to a serving bowl. Drizzle with additional olive oil and garnish with fresh basil leaves or a sprinkle of paprika if desired.

Notes

  • For a nut-free option, substitute tahini with sunflower seed butter or almond butter.
