Ingredients

  • 1/2 cup unsalted butter melted
  • 1.5 cups mashed banana (about 3 large bananas)
  • 3/4 cup sugar
  • 1 large egg slightly beaten
  • 1.5 cups white whole wheat flour
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 12 maraschino cherries chopped
  • 1/2 cup mini chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C).
  • Line your muffin tin with parchment paper or muffin liners.
  • In a large mixing bowl, combine the melted butter, mashed bananas, sugar, and slightly beaten egg. Whisk until well blended.
  • In a separate bowl, whisk together the white whole wheat flour, kosher salt, baking soda, baking powder, and cinnamon.
  • Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  • Fold in the chopped maraschino cherries and mini chocolate chips.
  • Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  • Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  • Remove from oven and allow to cool in the tin for 5 minutes, then transfer to a cooling rack.
