Ingredients

For the Cake:

  • 225 grams butter Room temperature, softened
  • 225 grams caster sugar
  • 225 grams self-raising flour
  • 4 large eggs Room temperature
  • 1 orange zest Finely grated
  • 1 orange juice
  • 85 grams caster sugar For the drizzle

Instructions

The Process

  • Step 1: Preheat your oven to 180°C (350°F).
  • Step 2: Grease your loaf tin with butter and line it with baking parchment.
  • Step 3: In a mixing bowl, beat together the softened butter and 225 grams of caster sugar until light and fluffy.
  • Step 4: Add the eggs one at a time, mixing well after each addition.
  • Step 5: Sift in the self-raising flour and add the grated orange zest. Gently fold until just combined.
  • Step 6: Pour in the orange juice and gently fold into the batter.
  • Step 7: Pour the batter into the prepared loaf tin and bake for 45-50 minutes.
  • Step 8: Prepare the drizzle by combining the orange juice and 85 grams of caster sugar in a saucepan and heating until dissolved.
  • Step 9: Once baked, let the cake cool for 10 minutes, then poke holes in it and pour the drizzle over.
  • Step 10: Let the cake cool completely before slicing and serving.
